Café Trio Chocolate Cake
Makes 8
Ingredients:
½ pound butter at room temperature
½ pound of shaved 60% couverture chocolate cut into small cubes
4 whole eggs
4 egg yolks
¾ cup sugar
¼ cup sifted flour
crushed hazelnuts
gelato (optional)
Method:
- Melt the chocolate and butter together over double boiler set aside
- Whisk the eggs, yolks and sugar together then pour in the chocolate slowly
- Add ¼ cup sifted flour mix until smooth
- Coat ramekins with butter and sugar before pouring the mixture in
- Bake at 350 degrees for 14 minutes. Let it stand for 2 minutes
- Garnish with crushed hazelnuts and a scoop of gelato
Sauce:
1 cup couverture chocolate cubes
¼ cup cream.
Method:
- Melt the chocolate with the cream in a sauce pan over low heat.
