Linguine With Manila Clams
Serves 4
Ingredients:
2 Tbl garlic, minced
4 Tbl shallots, minced
8oz extra virgin olive oil
2 Lbs manila clams
8oz white wine
4oz butter
Juice from 2 lemons
4 tsp anchovy paste
4 Tbl julienned basil
4oz clam juice
salt and pepper
8oz diced tomatoes
8oz julienned zucchini
2 Lbs cooked linguine
Method:
- In a sauté pan add the olive oil, shallots, garlic and clams. Cooked covered until clams just start to open
- Add the white wine, clam juice, lemon, anchovy and butter.
- Simmer until the sauce is reduced by ½
- Add tomatoes, zucchini, basil and pasta. Season with salt and pepper
