Linguine With Manila Clams
Serves 4

Ingredients:

2 Tbl garlic, minced
4 Tbl shallots, minced
8oz extra virgin olive oil
2 Lbs manila clams
8oz white wine
4oz butter
Juice from 2 lemons
4 tsp anchovy paste
4 Tbl julienned basil
4oz clam juice
salt and pepper
8oz diced tomatoes
8oz julienned zucchini
2 Lbs cooked linguine

Method:

In a sauté pan add the olive oil, shallots, garlic and clams. Cooked covered until clams just start to open
Add the white wine, clam juice, lemon, anchovy and butter.
Simmer until the sauce is reduced by ½
Add tomatoes, zucchini, basil and pasta. Season with salt and pepper
